I got a lot of things done this weekend, things that I wanted to do (and didn't have too)... Went for a few nice evening walks and looking at Christmas lights, watching two movies we rented (Hangover and Angels & Demons). And then I found some time to bake, tried out a new recipe Blueberry foldovers(they taste better than how they look)but so easy to make (recipe below).
And then today, I finally dusted of my sewing machine and gave it another try, and I had so much fun and I fell in love with sewing again. I made five Christmas stockings as we cant find the old once I made 10 years ago. And if I may say so my self, I think they turned out rather good looking and not bad for someone who almost flunked grade 9 sewing class. Everything but the white felt and the white lace, were from old fabric sample books that I have been laying around for years (from my decorating business days). Now I cant wait to try sewing something else.
I hope everyone is having a great weekend so far and happy 4th Advent.
Blueberry foldover recipe:
Makes 5 dozen & pre heat the oven to 375F (apx 200c)
1 cup butter
1 8-ounce cream cheese (both butter and cheese at room temperature)
2 1/2 cups flour
filling blueberry or raspberry preserves
In a large bowl, beat together butter, cream cheese and when smooth, then beat in flour and mix until you have a dough. then wrap it in plastic and chill for an hour.
After chilled, dust the baking surface and roll out the dough to about 1/8-inch thickness. Cut with a round cookie cutter (apx 2 1/2" round). Place a tsp full of the preserves and fold the dough (so it makes a half moon shape) and seal the edges with a fork. Bake for 10 to 20 min or until lightly brown. Cool on wire rack.
And you can put on icing on top when cookies are all cooled (2 cups powder sugar, 3 tbls milk & 1/2 tsp vanilla extract). I didn't put the icing on and its really nice without, remind me of Finnish plum stars my mum used to make for the holidays.
